High-fructose corn syrup (HFCS) became the villain of many food labels, spawning 'no HFCS' badges everywhere. The reality is more measured than the marketing suggests.
What it is
HFCS is a liquid sweetener made from corn starch, processed to convert some of its glucose into fructose, which is sweeter. The most common version, HFCS-55, is about 55% fructose and 45% glucose. It became popular from the 1970s because it was cheap, liquid (easy to blend into drinks), and long-lasting.
How it compares to table sugar
Here's the part that surprises people: HFCS is compositionally close to table sugar (sucrose), which is 50% fructose and 50% glucose. The fructose-to-glucose ratio is nearly the same, the calories are the same (about 4 per gram), and the body largely handles them alike. Most major health bodies consider HFCS and sugar roughly equivalent.
The fructose question
Fructose is metabolized mainly by the liver, and very high intakes of fructose — from any source — are linked to fatty liver and other metabolic issues. But since HFCS and table sugar contain similar fructose, this is really an argument against excess added sugar in general, not HFCS specifically.
So is 'no HFCS' meaningful?
Not very. A product sweetened with cane sugar instead of HFCS is nutritionally almost identical. 'No high-fructose corn syrup' is largely a marketing signal, not a health guarantee — the drink can still be loaded with added sugar.
